With a pronounced cheese and hot pepper flavor profile, this bread is made with a small quantity of levain, which creates the mild taste of long natural fermentation. The bread is oval shaped (flat on the side where it is baked on the hearth), golden brown with one distinct cut on the top. The loaf is topped with cheddar cheese and the bottom of the loaf is lightly dusted with semolina. The interior is soft with small pockets of cheese and diced roasted peppers dispersed throughout and a random open cell structure typical of well-fermented bread dough. The bread has a distinct cheese aroma with a combination of baked notes and yeast fermentation. Distributed as parbaked and frozen, ready to be final baked by the retailer and set out for sale
